Recipe Review

I made Chicken Cacciatore Pronto tonight which was a new recipe from my Kraft What's Cooking magazine. This magazine is free & you can sign up for it online. It's an amazing magazine & I've tried many recipes from the magazine over the years. The kids didn't really like it but my DH & I really enjoyed it. I'm posting the recipe and I hope you guys try it, you'll love it!

Chicken Cacciatore Pronto

4 servings
1 Tbsp. KRAFT Light Zesty Italian Reduced Fat Dressing
8 bone-in chicken thighs (1-1/2 lb.), skin removed
3 cloves garlic, minced
1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
1/3 cup tomato paste
2 small red peppers, chopped
8 oz. (1/2 of 1-lb. pkg.) whole wheat spaghetti, uncooked
1/4 cup KRAFT 100% Grated Parmesan Cheese
1/2 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese

HEAT dressing in large nonstick skillet on medium-high heat. Add chicken; cook 10 min. or until chicken is lightly browned on both sides, turning occasionally.

ADD garlic, tomatoes and tomato paste; mix well. Stir in peppers; cover. Reduce heat to medium-low; simmer 20 min. or until chicken is cooked through (165°F), stirring occasionally. Meanwhile, cook pasta as directed on package.

REMOVE skillet from heat. Add Parmesan cheese to chicken mixture; stir. Sprinkle with mozzarella cheese. Let stand 5 min. until mozzarella cheese is melted. Serve chicken and sauce over hot cooked pasta.

Great Snack...


I was reading a book on weight loss & they suggested a snack idea that I thought sounded good but I'd never had it before. Plain old apple with peanut butter! I tried it today & I must say what a great snack! I really liked it & I recommend this snack & I will be having it again.

I did my workout video this a.m. My goal is 3/week, so I'm off to a good start!

The Scale




So the scale is moving in the right direction. I checked today! Though my problem is that I check it all the time, usually in the morning and at night to see if I can figure out what I'll weigh in the morning. So I read something in a book & have decided to not weigh myself again until January 28th, one month after my start back to losing weight. I asked my DH to hide the scale because I don't think that I could not peek!

Cashews!!


So last night I wanted to eat some of the salted cashews that my sister brought over to my house because she didn't want them at her house!! I told my DH I wanted some cashews, I was just talking out loud. About 10 minutes later my husband brings out the container, opens them and offers me some. I said No. He kept eating them & the smell of them wafted over to me. I didn't eat any. I watched t.v for about 2 more hours, I thought about those cashews of and on for the next 2 hours. Did I eat any? No, I didn't. Am I surprised? Yes. Am I happy I resisted the call of the cashews? Yes.

Chocolate Chip Banana Bran Muffins

Remember my recipe for Chocolate Chip Banana Bran Muffins, I think it was my second post when I started this blog. Anyways I made some today & I wanted to figure out the nutrition info to see if they really were low in WW points & good for me. Well these are really good for you & a great snack option especially when craving a muffin. I love baked goods!! Here's the Nutrition info for 12 muffins.
CALORIES 104.25
FAT 0.8g
FIBER 3.5g

So bake up some of these delicious muffins!

Based on using White sugar instead of Splenda & 1/2 cup Whole Wheat Flour & 1/2 cup All-Purpose Flour

New Years Resolutions...

Well my weight loss has been stalled since I last posted in 2007. I still need to lose 30 lbs, and this year I will attain my goal!! I know I've said it before a million times but I have a little bit of extra motivation this year. We are going to Disney in Florida during October and a Disney cruise to the Bahamas.

Will lying on a beach in the Bahamas be enough motivation? I hope so.

If that isn't enough motivation will my sister-in laws wedding in September be more motivation? I hope that I have enough motivation to get me to finally lose this weight.

My goal is to lose these 30 lbs before school is done at the end of June. Last summer I gained back some weight so I'm hoping that if I'm at goal before summer I won't put it back on, that I can maintain during summer. I'm hoping to post more regularly this year to help me be more accountable, hopefully it'll work. I'm going to be posting some new goals & rewards and hopefully all goes well.
